Beetroot and Feta Burgers

A friend posted this recipe last week after reading my blog ‘9 ways to 10-a-day’. This vegetarian burger sounded interesting so I thought I would give it a try. I have never eaten a vegetarian burger so wasn’t sure what to expect or whether I’d like it.

As you can see from the image above, my burgers didn’t quite look like those in the recipe. Maybe I had used 3 “small’ beetroots instead of 3 ‘medium’ beetroots, as a result I seemed to have a lot of oats. They did take a reasonable time to make and half way through I lost confidence that I would actually like them, but I persevered.

I seared them in the griddle for about 10 mins, then placed them in the oven (180 degrees C) for around 20 mins.

I served them in buns with a little mayonnaise, avocado and lettuce.

The verdict was that they were LOVELY! The mix of flavours is great, although you could probably add a little more garlic, cumin and seasoning. It might be hard to believe but they actually had a slightly meaty texture.

If you are having any vegetarian friends over for a BBQ then these would be perfect. As a big meat-lover, even I would be happy to have these as a substitute meat burger on the BBQ. I cooked them on the hob and in the oven although I am sure they could be cooked directly on the BBQ; just be careful though should they break up.

I will definitely make these again, although next time before cooking I would batch a couple up for freezing so that when we’re next having a BBQ I can simply defrost a couple and cook to save time.
